Eating a chicken salad sandwich while on a diet is virtually unheard of…and we absolutely love chicken salad! So once we learned how to make our own whole 30 compliant olive oil mayo…it opened up a whole new world of possibilities for many of our favorites. So today we are sharing the details for how we created this yummy dish… See Mayo and Salad recipe below πŸ™‚

Olive OIL MAYO

1 egg (room temperature)

mix with hand mixer or we use a blender

Add in lemon juice to taste ( I dont really measure just squeeze in a little at a time, then taste at the end before I add in any more) typically its 1 tsp.

Add 1/2 tsp dry mustard powder

add in 1/2 tsp salt

pepper to taste (optional)

garlic 1/4 tsp Β or a couple shakes (optional) we like garlic in everything πŸ™‚

then blend in 1/2-3/4 C light olive oil, mix until thick. (tip..start with 1/4 cup blending it completely…then another 1/4 cup and so on…you may only need a 1/2 cup)

Once your mayo is made this can be used in just about any type of dressing, sauce, etc.

 

Cashew Chicken Salad

chop 1-2 breasts of cooked chicken

chop 1-2 green onions depending on how much you like them πŸ™‚

chop 2 T cashews or almonds both are amazing!

chop about 4 pitted dates (you can also use grapes if you don’t have dates)

mix in 2-3 T of olive oil mayo…

add in a little coconut milk till you have your desired consistency

Serve on a bed of baby romaine lettuce
